C is for Cookie







Since I'm finally (Hallelujah!!) feeling better, Cole and I decided to make some Get Well Soon cookies for a couple friends of HIS that are not feeling so hot. Cole was SO excited when I told him he could help me make cookies. He couldn't keep his hands out of anything (don't worry you guys, I'm sure the heat from the oven killed the germs) haha...anyway, he stuck his hand in the flour and put a big mouthful into his mouth before I could stop him. HILARIOUS. I am evil I guess--but I laughed so hard at the look of his face while he immediately started spewing out the floury paste. He hadn't learned his lesson though. When it came time for the cocoa powder, he eagerly stuck his hand in and helped himself. I have never seen such a contorted face in ALL my life. Is it mean of me to let him do it? I figured that sometimes you have to experience something before knowing that you really DON'T want to do it. Obviously I won't be like this with really important things--but eating unsweetened cocoa powder? Yes. The best part is that once the cookies were done, he wouldn't go near them. He wouldn't touch them with a ten foot pole. He wanted NOTHING to do with them. They were brown, and that meant they were bitter. I am laughing to myself right now...

Here is the recipe. They are divine.

White Chip Chocolate Cookies

Prep Time: 15 minutes
Cook time: 10 minutes
Yield: About 4 dozen

Ingredients:

1 C butter
2 C sugar
2 eggs
2 tsp vanilla extract
2 C all-purpose flour
3/4 C unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
2 C white chocolate chips

Directions:

* Preheat oven to 350 degrees F.

* In a large bowl, cream together the butter and sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, cocoa, baking soda and salt; stir into creamed mixture. Fold in the white chocolate chips. Drop by rounded teaspoonfuls onto un-greased cookie sheets.

* Bake for 8-10 minutes in the preheated oven, until cookies are set. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

When I was a wee little one, I always would sneak into the flour and eat it! There are a few pictures of me just standing there with flour EVERYWHERE. Gross when I think about it now, I wonder if I was just always hungry, much like today....

And speaking of which, I am totally making these cookies this week! They look delicious!!! Thanks for the recipe!

Ha! That is funny! I'm guilty of this too! Just today Asher wanted some bread dough. He kept whining and reaching for it so I finally gave it to him. He cried out, threw it in the garbage and made himself scarce!
Poor Cole, at least he learned his lesson not to stick everything in his mouth!
Funny story...I just made cookies from the recipe that you posted. Mine turned out all flat, and were kind of difficult to work with, but I pressed on. The last batch is just finishing, so I thought I'd check out your pictures to see if your cookies looked like mine. Nope. Not even close. So I thought I'd check your recipe to see if I wrote it down correctly. Nope. I used 2 cups butter instead of 1! A whole extra cup of butter! What the crap!
Okay wait, Kendall corrected me. I did use just one cup of butter. My pregnancy brain is really getting the better of me. He thinks it was the temperature of our oven that messed them up. Baking is something I love, but I am not too good at it!

I tried to make your cookies they were yummy! I did have to smoosh them a little before I put them in the oven, otherwise they came out looking like a mound of chocolate, instead of a cookie... I'm really not complaining because I still ate those mounds of chocolate!

Those look delicious. I hope I can be Cole's friend when I get sick even if he does stick his hands in the flour and cocoa.

So, I know you're an American Idol fan and I'm dying to know if you actually vote? There was one season (the one with Clay) where I actually voted but I never do any more. Do you? Feel free to address this in your next entry about David Archuleta which we all know is coming. ;) ;) HEHE!
dax was blog surfing and i walked in on him scrolling down your blog. He was saying, "These guys seem cool, I'd want to hang out with them..." Then I saw the picture of your cookies and yelled, "STOP! We're making those!" Anyway, they are on the cooling rack right NOW. Evil little things, we ate a dozen cookies in dough form before we could get them all baked!
